BASIC SMALL BUN


With the Basic Small Bun, you will need;
·         225g (9 oz) flour or 200g (8oz) flour
·         25g (1 oz) corn, rice, plantain or bean flour
·         ½ teaspoon salt
·         2 levelled teaspoons baking powder
·         75g (3 oz) sugar
·         90g (3 ½ oz) butter or margarine
·         1 egg
·         Milk
tthis is the standard measurement but you can decide on what to use

METHOD
1.       Sieve the flour, salt and baking powder. Rub the fat into flour until it resembles fine breadcrumbs. Add sugar.
2.       Beat egg and make up to 140ml (¼ pint) milk, add liquid to the flour.
3.       Mix to a soft dough which is stiff enough for a fork to stand straight in.
4.       Divide the dough into small portions and bake on a greased tray in a moderately hot oven for 15-20 minutes.
5.       Turn onto a cooking rack.
Vary the mixture by adding flavourings.
